As I have received a note telling me that I talk too much… and should let the data show speak for itself…
I have moved the fermenters into a warmer room to condition for another week. It appears that all three have reached terminal gravity, although the under-pitch may have moved down a very slight degree or two. Hard to say with with a refractometer. I am convinced that I can taste differences between all three, but not positive I could in a blind tasting. At least I am fairly sure I could isolate the under-pitch anyway.
I will let these ride for a week at 74+F, then prime and bottle. No real data, just facts. Happy?
It’s Thursday. I haven’t checked on the beers. They are in a warmer part of the house and sitting quietly. This is the hard part – I get all anxious.
They will continue to sit, probably until Saturday.
The temperature is supposed to drop here – seems like a great time to get these into bottles and conditioning.
